Cebu Series, A. Bourdain: “Best Pig.. Ever!” Zubuchon


Boo left early for work on our second day in Cebu (yes, he was working in Cebu!), and I was still full from the night before. I haven’t had breakfast. At around 12, my tummy croaked. It was a sign saying I’ve got to get some Lechon. I was in Cebu anyways!  This was the most unhealthy breakfast as far as I can recall. To give you a brief background, I always start my day with fruits and the rest follows. Today is very different, it was Zubuchon (Php450/kilo) for me.

Dubbed as the best pig ever by world-class chef/traveler/food critic Anthony Bourdain. Zubuchon is Lechon that is acupunctured to give the pig a Lechon Kawali/Bagnet look. What I really like about this roasted pig is that the skin is very crisp yet light, close to chicharon. And when it is becomes soggy, it still is soft and not the gummy chewy kind you would just save for Paksiw. I was lucky to get the ribs area, you can’t really see it because it was already packed. Meat is tasty but not equally marinated. Some parts were too salty, others not. Overall it was good, best eaten with rice.

  4. MrsM: It's okay, as long as you've eaten Cebu lechon. :) It's the same, other than the different crackling of the skin.

    Banilad Town Center, Mactan Domestic Airport and Escario Bldg.
